The Drink: Highland Smoke Martini

This isn't your standard espresso martini. The Highland Smoke takes FB Roasters Papua New Guinea coffee , with its caramel, honey, and fruit notes , and marries it with aged dark rum to pull out those deep molasses and earthy undertones. The smoked sea salt garnish? That's the magic trick that makes the chocolate notes absolutely sing.

The Recipe

Ingredients:

  • 2 oz premium vodka
  • 0.5 oz aged dark rum
  • 1.5 oz FB Roasters PNG espresso (cooled)
  • 0.5 oz coffee liqueur (we love Mr. Black)
  • 0.25 oz demerara syrup
  • Garnish: 3 Papua New Guinea coffee beans + a pinch of smoked sea salt

Instructions:
Shake hard with ice , and we mean hard. You want that beautiful crema from these oils. Double-strain into a chilled coupe glass, then garnish with the coffee beans and just a tiny pinch of smoked sea salt on top. The salt is what makes the chocolate notes pop, so don't skip it.

Why Papua New Guinea Coffee?

The Papua New Guinea beans we're using come from the Chimbu Province, grown at 1350 meters and fully washed, then sun-dried. This is a medium roast with tasting notes of caramel, honey, and fruit , which might sound sweet, but when you cool it down for a cocktail and add that aged rum, you're unlocking something deeper. Think brown sugar, warm spice, a hint of tropical fruit that doesn't scream "dessert" but whispers "complexity."

These are Bourbon and Typica varieties, and they hold up beautifully when you shake them with spirits. The crema you get from PNG espresso is no joke , it's silky, luxurious, and looks absolutely stunning in a coupe glass.
